Ingredients

  • 2 pounds boneless pork shoulder
  • 6 pieces dried guajillo chiles
  • 4 pieces dried ancho chiles
  • 0.5 cups white vinegar
  • 4 pieces garlic cloves
  • 1 teaspoons ground cumin
  • 1 teaspoons dried oregano
  • 1 teaspoons paprika
  • 1.5 teaspoons salt
  • 0.5 teaspoons ground black pepper
  • 0.5 cups orange juice
  • 2 tablespoons vegetable oil
  • 2 cups water

Directions

Step 1

Start by preparing the dried chiles. Remove the stems and seeds from the guajillo and ancho chiles. Heat a dry skillet over medium heat and lightly toast the chiles for about 1-2 minutes, until aromatic, being careful not to burn them.

Step 2

Place the toasted chiles in a bowl and cover them with 2 cups of hot water. Let them soak for 15-20 minutes until softened.

Step 3

Drain the softened chiles and add them to a blender. Add the white vinegar, garlic cloves, ground cumin, dried oregano, paprika, salt, black pepper, and orange juice. Blend until smooth to create the adobada marinade. If the marinade is too thick, add a little water to thin it out to a pourable consistency.

Step 4

Cut the pork shoulder into 1-inch cubes and place them in a large bowl or zip-top bag. Pour the marinade over the pork, ensuring all pieces are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to develop.

Step 5

Preheat a large skillet or Dutch oven over medium-high heat and add the vegetable oil. Remove the pork from the marinade, allowing any excess marinade to drip off, but reserve the marinade for later.

Step 6

Sear the pork in batches, cooking for about 3-4 minutes per side until browned. Do not overcrowd the pan.

Step 7

Once all the pork is seared, return it to the skillet or Dutch oven. Pour the reserved marinade over the pork and add 1/2 cup of water. Stir to combine.

Step 8

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 to 1.5 hours, stirring occasionally, until the pork is tender and the sauce has thickened.

Step 9

Taste and adjust seasoning if necessary. Serve the Pork Adobada hot with warm tortillas, rice, or your favorite side dishes.
