Ingredients

  • 170 grams Unsalted butter
  • 100 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 250 grams All-purpose flour
  • 2 tablespoons Poppy seeds
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Baking powder
  • 1 piece Egg yolk
  • 2 tablespoons Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream the butter and granulated sugar together using a hand mixer or stand mixer on medium speed until light and fluffy, about 2-3 minutes.

Step 3

Add the vanilla extract and egg yolk to the butter mixture, and beat until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, poppy seeds, salt, and baking powder.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until a dough forms. Be careful not to overmix.

Step 6

Scoop out tablespoon-sized portions of the dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.

Step 7

Using the back of a fork or your fingers, gently flatten each ball of dough slightly to form a cookie shape.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers will still look slightly soft.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

If desired, dust the cooled cookies with powdered sugar before serving.
