Ingredients

  • 4 pieces bone-in pork chops
  • 3 whole ripe peaches
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic cloves
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 sprigs fresh thyme
  • 0.5 cup chicken or vegetable stock

Directions

Step 1

Season the pork chops on both sides with 1 teaspoon of salt, 0.5 teaspoon of black pepper, and 1 teaspoon of smoked paprika. Set aside while preparing the other ingredients.

Step 2

Peel and pit the peaches, then slice them into wedges. Mince the garlic cloves finely.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for 3-4 minutes on each side until a golden-brown crust forms. Remove the pork chops from the skillet and set them aside.

Step 4

Lower the heat to medium and add another 1 tablespoon of olive oil to the skillet. Stir in the minced garlic and cook for about 30 seconds until fragrant.

Step 5

Add the sliced peaches, 2 tablespoons of honey, 2 tablespoons of balsamic vinegar, 0.5 teaspoon of ground cinnamon, and the fresh thyme sprigs. Stir gently to coat the peaches in the sauce.

Step 6

Pour in 0.5 cup of chicken or vegetable stock, bringing the mixture to a gentle simmer. Allow the peaches to soften slightly, about 3-4 minutes.

Step 7

Return the pork chops to the skillet, nestling them among the peaches and sauce. Cover the skillet with a lid and let the pork cook through for another 8-10 minutes depending on thickness, or until the internal temperature reaches 145°F (63°C).

Step 8

Remove the skillet from heat and let the dish rest, covered, for 5 minutes to allow the flavors to meld.

Step 9

Serve the pork chops topped with the peach mixture and a drizzle of the pan sauce. Garnish with additional fresh thyme if desired.
