Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 4 slices Bacon, chopped
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 4 cups Kale, stems removed and chopped
  • 2 cups Cauliflower florets (for a low-carb potato substitute)
  • 0.5 teaspoon Crushed red pepper flakes (optional)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Parmesan cheese, grated (optional for garnish)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat.

Add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside on paper towels to drain, leaving the rendered fat in the pot.
