Ingredients

  • 2 15-ounce cans Canned red kidney beans
  • 1 piece Smoked ham hock
  • 1 teaspoon Liquid smoke
  • 1 teaspoon Ground paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.25 teaspoon Ground cayenne pepper
  • 0.5 teaspoon Salt
  • 1.5 cups Water
  • 1 cup Long-grain white rice
  • 1 tablespoon Butter

Directions

Step 1

In a medium pot, combine the canned red kidney beans (do not drain), smoked ham hock, water, and all seasonings (liquid smoke, paprika, garlic powder, onion powder, cayenne pepper, and salt).

Step 2

Place the pot over medium-high heat and bring it to a gentle boil.

Step 3

Once boiling, reduce the heat to low, cover the pot, and let the beans simmer for 45 minutes. Stir occasionally to prevent sticking, and use a spoon to mash some of the beans against the side of the pot to create a creamy texture.

Step 4

While the beans are simmering, prepare the rice. In a separate pot, bring 2 cups of water to a boil. Add the butter and the long-grain white rice, then reduce the heat to low. Cover the pot and let the rice simmer for 18-20 minutes, or until all the water is absorbed and the rice is tender.

Step 5

After the beans have simmered for 45 minutes, remove the ham hock from the pot. If desired, shred any meat from the ham hock and stir it back into the beans.

Step 6

Taste the beans and adjust the seasoning if needed.

Step 7

To serve, spoon the cooked rice onto plates or into bowls and top with the creamy red beans. Enjoy your homemade Popeye's Red Beans n' Rice!
