Ingredients

  • 12 sheets lasagna noodles
  • 500 grams fresh spinach
  • 500 grams ricotta cheese
  • 400 grams shredded mozzarella cheese
  • 100 grams grated Parmesan cheese
  • 2 large eggs
  • 800 ml marinara sauce
  • 2 tablespoons olive oil
  • 3 cloves minced garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

Cook the lasagna noodles according to the package instructions. Drain, and lay them flat on a clean surface to prevent sticking.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 4

Add the fresh spinach to the skillet. Cook, stirring occasionally, until wilted (about 4-5 minutes). Remove from heat and set aside to cool slightly.

Step 5

In a mixing bowl, combine the ricotta cheese, eggs, 60 grams of grated Parmesan cheese, salt, black pepper, and dried Italian seasoning. Stir until fully mixed.

Once the spinach has cooled, chop it finely and fold it into the ricotta mixture.

Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking dish.

Place a single layer of lasagna noodles over the sauce. Spread 1/3 of the spinach-ricotta mixture evenly over the noodles, followed by 1/4 of the marinara sauce and 1/4 of the shredded mozzarella cheese.

Repeat the layering process (noodles, ricotta mixture, marinara, mozzarella) two more times.

For the top layer, place the remaining marinara sauce and mozzarella cheese over the noodles. Sprinkle the remaining Parmesan cheese evenly on top.

Cover the dish with aluminum foil (lightly greased to prevent sticking) and bake in the preheated oven for 25 minutes.

Remove the foil and bake an additional 20-25 minutes, or until the cheese on top is bubbly and golden brown.
