Ingredients

  • 4 cups Fresh spinach
  • 8 large Eggs
  • 1 cup Milk
  • 1 cup Cheddar cheese, shredded
  • 1 cup Cherry tomatoes, halved
  • 1 small Yellow onion, diced
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray or olive oil.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

Step 3

Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to avoid burning.

Step 4

Gradually add the spinach to the skillet, stirring occasionally, until it wilts down completely. This should take about 3-4 minutes. Remove the skillet from heat and set aside.

Step 5

In a large bowl, whisk together the eggs, milk, salt, black pepper, and nutmeg if using, until well combined.

Step 6

Spread the spinach mixture evenly in the prepared baking dish. Scatter the halved cherry tomatoes over the spinach.

Step 7

Pour the egg mixture over the vegetables, ensuring it’s evenly distributed.

Step 8

Sprinkle the shredded cheddar cheese evenly over the top of the egg mixture.

Step 9

Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown.

Step 10

Remove from the oven and let the bake cool for 5 minutes before slicing into portions. Serve warm and enjoy!
