Ingredients

  • 6 medium-sized Bell peppers (any color)
  • 2 cups White vinegar
  • 1 cup Water
  • 3 tablespoons Granulated sugar
  • 1 tablespoon Salt
  • 3 whole Garlic cloves
  • 1 teaspoon Black peppercorns
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Red pepper flakes (optional, for heat)
  • 3 sprigs Fresh dill sprigs (optional)

Directions

Step 1

1. Wash and dry the bell peppers. Slice them into thin strips, discarding the seeds and stems. Set aside.

Step 2

2. In a medium saucepan, combine white vinegar, water, granulated sugar, and salt. Heat over medium heat, stirring occasionally, until the sugar and salt are fully dissolved (about 5 minutes).

Step 3

3. Add garlic cloves, black peppercorns, mustard seeds, and red pepper flakes (if using) to the mixture. Let it simmer for another 2 minutes to infuse the flavors.

Step 4

4. Place the sliced bell peppers into clean, sterilized jars. Pack them tightly, leaving about 1/2 inch of space from the top.

Step 5

5. If using fresh dill sprigs, tuck them into the jars alongside the bell peppers.

Step 6

6. Carefully pour the hot pickling liquid over the bell peppers, ensuring they are fully submerged. Leave about 1/4 inch of headspace in each jar.

Step 7

7. Tap the jars gently on the counter to release any trapped air bubbles. If needed, add more pickling liquid to fully cover the peppers.

Step 8

8. Seal the jars with lids and let them cool to room temperature. Once cool, transfer the jars to the refrigerator.

Step 9

9. Allow the peppers to marinate for at least 24 hours for optimal flavor. They will keep in the refrigerator for up to 1 month.
