Ingredients

  • 2 cups raisins
  • 2 cups water
  • 1 cup granulated sugar
  • 0.3333 cup vegetable oil
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour a 9x5-inch loaf pan or 8x8-inch square baking pan.

Step 2

In a medium saucepan, combine the 2 cups of raisins with 2 cups of water. Bring to a boil over medium heat, then reduce to a simmer and cook for 10 minutes. Remove from heat and let the mixture cool slightly.

Step 3

Add the granulated sugar and vegetable oil to the saucepan with the raisin mixture. Stir well to combine.

Step 4

In a separate large mixing bowl, sift together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt.

Step 5

Gradually pour the wet raisin mixture into the dry ingredients, stirring until just combined. Be careful not to overmix.

Step 6

Pour the batter into the prepared pan, smoothing the top with a spatula.

Step 7

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Remove from the oven and allow the cake to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.

Step 9

Serve plain or with a dusting of powdered sugar, if desired. Enjoy!
