Ingredients

  • 1 pound ground beef
  • 3 medium potatoes
  • 2 medium carrots
  • 1 medium onion
  • 0.5 cup frozen peas
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 1 tablespoon vegetable oil
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

Step 1

Peel and dice the potatoes and carrots into small, bite-sized pieces. Dice the onion as well.

Step 2

Heat the vegetable oil in a large skillet over medium heat.

Step 3

Add the ground beef to the skillet and cook until browned, breaking it into crumbles with a spoon. Drain any excess fat if necessary.

Step 4

Push the browned beef to one side of the skillet. Add the diced onion, potatoes, and carrots to the empty side and sauté for 5 minutes until slightly softened.

Step 5

Sprinkle the flour over the entire skillet and stir everything together until the flour is fully absorbed, about 1-2 minutes.

Step 6

Add the beef broth, tomato paste, garlic powder, dried thyme, salt, and pepper to the skillet. Stir well to combine and scrape up any browned bits from the skillet’s bottom.

Step 7

Simmer the mixture on medium-low heat for about 20-25 minutes, stirring occasionally, until the vegetables are tender and the stew has thickened.

Step 8

Stir in the frozen peas and cook for an additional 2-3 minutes until they are heated through.

Step 9

Taste the stew and adjust the seasoning with more salt and pepper if needed.

Step 10

Serve warm directly from the skillet with a crusty piece of bread or on its own. Enjoy this simple and hearty meal!
