Ingredients

  • 12 oz egg noodles
  • 2 cans canned tuna (drained)
  • 1 can condensed cream of mushroom soup
  • 1 cup milk
  • 1 cup frozen peas
  • 1.5 cups shredded cheddar cheese
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup breadcrumb topping (optional)
  • 2 tbsp butter (melted, for breadcrumbs)

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x13-inch casserole dish and set aside.

Step 2

Bring a large pot of salted water to a boil. Cook the egg noodles according to the package instructions until al dente, usually about 6-7 minutes. Drain and set aside.

Step 3

In a large mixing bowl, combine the drained tuna, condensed cream of mushroom soup, milk, frozen peas, and shredded cheddar cheese. Mix well until thoroughly combined.

Step 4

Add the cooked egg noodles to the mixture and gently fold until the noodles are evenly coated. Season with salt and pepper to taste.

Step 5

Pour the mixture into the prepared casserole dish and smooth the top with a spatula.

Step 6

If using the breadcrumb topping, mix the breadcrumbs with melted butter in a small bowl until evenly moistened. Sprinkle the breadcrumbs evenly over the casserole.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the casserole is hot and bubbly and the breadcrumb topping is golden brown.

Step 8

Remove from the oven and let cool for a few minutes before serving. Enjoy your delicious and economical Poor Man's Tuna Casserole!
