Ingredients

  • 1 pound ground beef
  • 1 medium, diced yellow onion
  • 2 cloves, minced garlic
  • 3 medium, peeled and diced russet potatoes
  • 3 medium, peeled and sliced carrots
  • 1 cup frozen green beans
  • 1 14 oz can, with juice diced tomatoes
  • 2 tablespoons tomato paste
  • 4 cups low-sodium beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 whole bay leaf

Directions

Step 1

Heat the olive oil in a large pot or dutch oven over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it into small pieces with a spoon. Remove the cooked beef with a slotted spoon and set aside, leaving the drippings in the pot.

Step 3

Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes, stirring occasionally, until softened and fragrant.

Step 4

Add the diced potatoes, sliced carrots, and frozen green beans. Stir to coat the vegetables in the oil and aromatics.

Step 5

Return the cooked ground beef to the pot.

Step 6

Stir in the diced tomatoes (with juice), tomato paste, paprika, thyme, salt, black pepper, and bay leaf.

Step 7

Pour in the beef broth and bring the mixture to a boil.

Step 8

Reduce the heat to low, cover the pot with a lid, and simmer for 25-30 minutes, or until the potatoes and carrots are tender.

Step 9

Remove the bay leaf before serving.

Step 10

Ladle the stew into bowls and enjoy it warm. Optional: Serve with crusty bread or rice for a heartier meal.
