Ingredients

  • 1 pound ground beef
  • 1 medium, diced onion
  • 4 medium, peeled and diced potatoes
  • 3 medium, peeled and sliced carrots
  • 14.5 ounces canned diced tomatoes
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and ground beef to the pot and cook until the beef is browned and the onion is soft, about 5-7 minutes. Drain any excess grease if necessary.

Step 3

Stir in the garlic powder, paprika, salt, and black pepper. Cook for another 1-2 minutes until the spices are fragrant.

Step 4

Add the diced potatoes and sliced carrots to the pot and stir to combine.

Step 5

Pour in the beef broth, canned diced tomatoes (with their juice), and tomato paste. Stir everything together.

Step 6

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let the stew simmer for 35-40 minutes, stirring occasionally, until the potatoes and carrots are tender.

Step 7

Taste and adjust the seasoning if necessary. Add more salt or pepper to your preference.

Step 8

Serve hot with a slice of crusty bread or a side salad for a complete meal.
