Ingredients

  • 4 medium russet potatoes
  • 1 large onion
  • 12 oz smoked sausage
  • 2 tbsp butter
  • 1 tbsp vegetable oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley (optional)

Directions

Step 1

Peel the potatoes and cut them into 1/2-inch cubes. Rinse them under cold water and pat them dry with a clean towel.

Step 2

Peel and thinly slice the onion into half-moons.

Step 3

Slice the smoked sausage into 1/4-inch rounds.

Step 4

Heat a large skillet over medium heat and add the butter and vegetable oil.

Step 5

Once the butter is melted and the oil is hot, add the diced potatoes in a single layer. Sprinkle with garlic powder, paprika, salt, and black pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes begin to brown and crisp.

Step 6

Add the sliced onions to the skillet, stir, and cook for another 5-7 minutes until the onions become soft and golden.

Step 7

Push the potatoes and onions to one side of the skillet and add the sliced smoked sausage to the other side. Cook for 4-5 minutes, turning occasionally, until the sausage is browned on both sides.

Step 8

Stir everything together in the skillet and let it cook for another 3-4 minutes, allowing the flavors to meld.

Step 9

Taste and adjust seasoning if needed. Garnish with fresh parsley, if using.

Step 10

Serve hot as a complete meal or alongside crusty bread for added comfort.
