Ingredients

  • 2 cups All-purpose flour
  • 1 cup Brown sugar
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 1 cup Raisins
  • 1 cup Water
  • 0.5 cup Vegetable oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Step 2

In a medium saucepan, combine the raisins and water. Bring to a boil over medium heat, then simmer for 5 minutes. Remove the saucepan from heat and allow the mixture to cool for 5 minutes.

Step 3

In a mixing bowl, whisk together the flour, brown sugar, baking soda, ground cinnamon, and salt until well combined.

Step 4

Add the vegetable oil to the cooled raisin-water mixture, stirring to combine.

Step 5

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Step 6

Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the edges are set and the cookies are lightly golden.

Step 8

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Enjoy your homemade Poor Man's Cookies with a cup of tea or coffee, or store them in an airtight container for up to 5 days.
