Ingredients

  • 4 medium Yellow squash
  • 2 medium Yellow onion
  • 3 tablespoons Olive oil
  • 1 tablespoon Butter
  • 2 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Wash and dry the yellow squash. Trim the ends and slice each squash into quarter-inch rounds.

Step 2

Peel the yellow onions and slice them into thin slices.

Step 3

Peel and mince the garlic cloves.

Step 4

Heat a large skillet over medium heat and add the olive oil and butter. Allow the butter to melt and combine with the oil.

Step 5

Add the sliced onions to the skillet and sprinkle with a pinch of salt. Cook, stirring occasionally, for about 6–8 minutes, or until the onions are soft and start to caramelize.

Step 6

Add the minced garlic to the skillet and sauté for 1 minute until fragrant.

Step 7

Add the sliced squash to the skillet. Season with the remaining salt and black pepper. Toss the squash to coat it in the butter-olive oil mixture.

Step 8

Cook the squash and onions together for 8–10 minutes, stirring occasionally, until the squash is tender but not mushy. Adjust seasoning to taste, if needed.

Step 9

Remove the skillet from the heat. If desired, garnish with freshly chopped parsley for a bright, herbal finish.

Step 10

Serve warm as a side dish and enjoy!
