Ingredients

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon mirin
  • 1 tablespoon rice vinegar
  • 2 tablespoons dashi stock or water
  • 0.25 cup katsuobushi (bonito flakes)
  • 1 1-inch piece kombu (dried kelp)

Directions

Step 1

In a small saucepan, combine the soy sauce, mirin, rice vinegar, dashi stock or water, katsuobushi, and kombu.

Step 2

Place the saucepan over medium heat and gently warm the mixture. Do not bring it to a full boil; heat just until steaming.

Step 3

Remove the saucepan from heat and let the mixture steep for 10 minutes to infuse the flavors of the bonito flakes and kombu.

Step 4

Strain the mixture through a fine mesh sieve into a bowl, discarding the solids (katsuobushi and kombu).

Step 5

Stir in the fresh lemon juice and lime juice. Mix thoroughly.

Step 6

Let the sauce cool to room temperature, or refrigerate it for at least 15 minutes to chill before serving.

Step 7
