  • 0.25 teaspoon Cinnamon
  • 2 large Egg whites (optional, for froth)

Directions

Step 1

In a medium mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is thick and pale in color.

Step 2

In a medium saucepan, combine the whole milk, heavy cream, nutmeg, and cinnamon. Heat over medium heat until just beginning to simmer. Do not let it boil.

Step 3

Gradually whisk the hot milk mixture into the egg yolk and sugar mixture to temper the eggs. Start by adding a small amount of the milk mixture at a time to prevent curdling.
