  • 10 leaves Fresh basil leaves
  • 1 teaspoon Dried oregano
  • 0.5 teaspoons Red pepper flakes
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Sugar (optional, to balance acidity)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the Roma tomatoes thoroughly, then slice them in half lengthwise and place them cut-side up on a large baking sheet.

Step 3

Peel the garlic cloves and scatter them between the tomatoes on the baking sheet.

Step 4

Peel the yellow onion, cut it into wedges, and add it to the baking sheet.

Step 5

Drizzle the olive oil evenly over the tomatoes, garlic, and onion. Sprinkle with dried oregano, red pepper flakes, salt, and black pepper.

Step 6

Place the baking sheet in the preheated oven and roast for 35-40 minutes, or until the tomatoes are soft and slightly caramelized, and the garlic is golden brown.

Add the fresh basil leaves and blend until smooth, or leave it slightly chunky depending on your preference.

Step 10

Taste and adjust seasoning if necessary, adding a pinch of sugar if the sauce is too acidic.

Step 11

Serve immediately over pasta, use as a pizza sauce, or store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
