  • 3 large Egg yolks
  • 60 milliliters Heavy cream
  • 1 teaspoons Salt
  • 0.25 teaspoons Ground white pepper
  • 0.25 teaspoons Ground nutmeg
  • 1 serving Egg wash (1 egg yolk mixed with 1 tbsp water)

Directions

Step 1

Peel the Yukon Gold potatoes and cut them into evenly sized chunks to ensure even cooking.

Place the potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil, then reduce the heat and cook until fork-tender, approximately 15-20 minutes.

Drain the potatoes thoroughly and return them to the hot pot. Let them sit for 1-2 minutes over low heat to remove excess moisture.

Using a potato ricer or a fine mesh sieve, mash the potatoes until smooth. Avoid using a food processor or blender, as this will make the potatoes gluey.
