Ingredients

  • 2 cups pomegranate juice
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice

Directions

Step 1

In a medium-sized saucepan, combine the pomegranate juice, granulated sugar, and lemon juice.

Step 2

Whisk the ingredients together until the sugar is fully dissolved.

Step 3

Place the saucepan over medium heat and bring the mixture to a gentle simmer.

Step 4

Reduce the heat to low and allow the mixture to simmer for 25-30 minutes, stirring occasionally. The syrup should reduce by about half and thicken slightly.

Step 5

To check if the syrup is ready, dip the back of a spoon into the syrup and swipe your finger across it. If it leaves a clear trail, the syrup has thickened properly.

Step 6

Remove the saucepan from the heat and let the syrup cool for 10-15 minutes. The syrup will continue to thicken as it cools.

Step 7

Pour the cooled syrup into a clean, airtight jar or bottle. Store in the refrigerator for up to 2 weeks.

Step 8

Use the pomegranate syrup as a topping for pancakes, waffles, ice cream, or yoghurt, or incorporate it into drinks and desserts.
