  • 2 cups Pomegranate juice
  • 1 cup Mountain Dew
  • 3 cups Granulated sugar
  • 1 box (1.75 oz) Powdered fruit pectin
  • 0.5 teaspoon Butter

Directions

Step 1

In a large heavy saucepan, combine the pomegranate juice and Mountain Dew. Stir to mix well.

Slowly whisk in the powdered fruit pectin until completely dissolved.

Step 3

Place the saucepan over medium-high heat and bring the mixture to a rolling boil, stirring frequently.

Step 4

Add the granulated sugar all at once, stirring constantly to dissolve. Once the sugar is dissolved, add the butter to reduce foaming.

Step 5

Bring the mixture back to a full rolling boil (a boil that doesn’t stop bubbling when stirred). Boil for 1 minute while stirring constantly.

Remove the saucepan from heat and skim off any foam with a spoon if necessary.

Carefully ladle the hot jelly into sterilized jars, leaving about 1/4 inch of headspace at the top of each jar.

Wipe the rims of the jars with a clean, damp cloth, place the lids on top, and screw on the bands until fingertip tight.

Process the jars in a boiling water bath for 10 minutes to properly seal.

Allow the jars to cool completely at room temperature. Ensure the seals are secure by pressing on the center of each lid; it should not pop back up.
