Ingredients

  • 500 ml Pomegranate juice (fresh or bottled)
  • 100 grams Granulated sugar
  • 125 ml Water
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 50 grams Pomegranate seeds (optional, for garnish)

Directions

Step 1

In a small saucepan, combine the water and granulated sugar over medium heat. Stir continuously until the sugar dissolves completely, creating a simple syrup. Remove from heat and let it cool to room temperature.

Step 2

In a large mixing bowl, combine the pomegranate juice, cooled simple syrup, and freshly squeezed lemon juice. Stir until the mixture is well blended.

Step 3

Pour the pomegranate mixture into a shallow, freezer-safe dish. Place the dish in the freezer and allow it to chill for 1 hour.

Step 4

After 1 hour, remove the dish from the freezer and use a fork to scrape and break up the ice crystals. Return the dish to the freezer.

Step 5

Continue freezing for about 3–4 hours, scraping and fluffing the granita with a fork every 30 minutes to ensure a light and flaky texture.

Step 6

Once the granita is fully frozen and has a granular, icy texture, scrape it one final time and spoon it into serving glasses or bowls.

Step 7

Optional: Garnish with a sprinkle of fresh pomegranate seeds for added texture and flavor. Serve immediately and enjoy!
