  • 1 pound smoked sausage or kielbasa
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 medium yellow onion
  • 2 cups pineapple chunks (canned or fresh)
  • 1 cup pineapple juice (reserved from canned pineapple or fresh)
  • 0.25 cup soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons olive oil
  • 4 cups cooked rice (optional, for serving)

Directions

Step 1

Slice the smoked sausage into 1/4-inch thick rounds. Set aside.

Step 2

Core and slice the red and green bell peppers into thin strips. Peel and slice the yellow onion into thin wedges.

Step 3

If using canned pineapple, drain the pineapple chunks and reserve 1 cup of juice.

Step 4

In a small bowl, whisk together the pineapple juice, soy sauce, brown sugar, rice vinegar, cornstarch, and water. Set aside.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sausage slices and cook for 3–4 minutes, flipping halfway through, until lightly browned. Remove the sausage and set aside.
