  • 20 oz pineapple chunks (in juice, not syrup)

  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Preheat your oven to 300°F (150°C).

Season the pork shoulder roast all over with salt and black pepper.

In a large Dutch oven or roasting pan, place the sliced red onion at the bottom to create a bed for the roast.
