Ingredients

  • 4 pieces Bone-in pork chops
  • 20 ounces Canned pineapple chunks (in juice)
  • 0.25 cup Soy sauce
  • 2 tablespoons Brown sugar
  • 0.5 cup Ketchup
  • 2 pieces Garlic cloves (minced)
  • 1 teaspoon Ginger (grated)
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 pieces Green onions (sliced, for garnish)
  • 4 cups Cooked white rice (optional, for serving)

Directions

Step 1

Season the pork chops with salt and black pepper on both sides.

Step 2

In a crock pot, combine the canned pineapple chunks (including juice), soy sauce, brown sugar, ketchup, minced garlic, and grated ginger. Mix well.

Step 3

Place the seasoned pork chops into the crock pot, ensuring they are submerged in the sauce. Spoon a bit of sauce over the top to coat them evenly.

Step 4

Cover the crock pot with a lid and set it to cook on LOW for 5-6 hours or on HIGH for 3-4 hours. The pork chops should be tender and fully cooked through.

Step 5

Once the cooking time is complete, remove the pork chops and set them aside on a plate. Keep them warm by tenting with foil.

Step 6

In a small bowl, mix the cornstarch with water to create a slurry. Slowly stir this mixture into the crock pot sauce to thicken it.

Step 7

Turn the crock pot to HIGH, cover, and let the sauce cook for an additional 10-15 minutes until it thickens to your desired consistency.

Step 8

Serve the pork chops over cooked white rice, if desired, and spoon the thickened Polynesian sauce generously over the top.

Step 9

Garnish with sliced green onions before serving.
