  • 1.5 pounds Pork shoulder (boneless, cut into bite-sized cubes)
  • 0.25 cups Soy sauce
  • 0.5 cups Pineapple juice
  • 2 tablespoons Brown sugar
  • 1 tablespoon Rice vinegar
  • 3 cloves Garlic (minced)
  • 1 tablespoon Fresh ginger (grated)
  • 1 cup Pineapple chunks (canned or fresh, drained if canned)
  • 1 large Red bell pepper (diced)
  • 2 stalks Green onion (sliced)
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water (for cornstarch slurry)
  • 4 cups Cooked white rice
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

In a large bowl, mix the soy sauce, pineapple juice, brown sugar, rice vinegar, minced garlic, and grated ginger. Add the pork cubes and toss to coat evenly. Marinate for 15 minutes while preparing other ingredients.

Step 2

Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Drain the pork (reserving the marinade) and sear it in the skillet in batches, cooking until browned on all sides. Remove and set aside.

In the same skillet, add the remaining 1 tablespoon of oil, followed by the red bell pepper. Sauté for 3-4 minutes until slightly softened.
