Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 16 oz canned peach slices (in juice)
  • 1 piece red bell pepper, sliced
  • 1 piece green bell pepper, sliced
  • 4 tbsp soy sauce
  • 3 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 tsp cornstarch
  • 2 tbsp water
  • 2 tbsp cooking oil
  • 1 tbsp sesame seeds (optional, for garnish)
  • 2 pieces green onions, sliced (optional, for garnish)

Directions

Step 1

Drain the canned peach slices, reserving 1/4 cup of the juice. Set both the peaches and juice aside.

Step 2

In a small bowl, combine the soy sauce, honey, rice vinegar, reserved peach juice, minced ginger, and minced garlic. Whisk together until smooth.

Step 3

In another small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Set aside.

Heat 1 tablespoon of cooking oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
