Ingredients

  • 1 lb Ground beef
  • 0.5 cup Breadcrumbs
  • 1 large Egg
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 cup Soy sauce
  • 1 cup Pineapple juice
  • 0.5 cup Brown sugar
  • 2 tbsp Rice vinegar
  • 0.25 cup Ketchup
  • 1 tbsp Cornstarch
  • 2 tbsp Water (for cornstarch slurry)
  • 1 tbsp Vegetable oil
  • 1 large Green bell pepper (chopped)
  • 1 large Red bell pepper (chopped)
  • 1 cup Pineapple chunks (canned or fresh)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2

In a large mixing bowl, combine ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.

Step 3

Shape the meat mixture into 1-inch balls and arrange them on the prepared baking sheet. You should get about 20-24 meatballs.

Bake the meatballs in the preheated oven for 12-15 minutes, or until they are cooked through and lightly browned.

While the meatballs are baking, prepare the Polynesian sauce. In a medium saucepan, whisk together soy sauce, pineapple juice, brown sugar, rice vinegar, and ketchup. Bring the mixture to a simmer over medium heat.
