Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup pineapple chunks (canned, in juice)
  • 0.5 cup pineapple juice (reserved from can)
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 0.25 cup soy sauce
  • 2 tablespoons light brown sugar
  • 2 tablespoons rice vinegar
  • 1 teaspoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons vegetable oil
  • 2 stalks scallions, sliced for garnish
  • 0 to taste cooked rice (optional, for serving)

Directions

Step 1

Cut the chicken breasts into bite-sized chunks, about 1-inch pieces, and set aside.

Step 2

In a medium bowl, mix the pineapple juice, soy sauce, light brown sugar, rice vinegar, grated ginger, and minced garlic together to form the sauce.

Step 3

In a small bowl, whisk together the cornstarch and water until smooth, then set aside.

Step 4

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook until golden brown on the outside and fully cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, add the remaining tablespoon of oil. Add the diced red and green bell peppers and sauté for 3-4 minutes until slightly softened.

Step 6

Add the pineapple chunks to the skillet and cook for 1-2 minutes, stirring occasionally.

Step 7

Pour the prepared sauce into the skillet. Bring it to a simmer and cook for 2 minutes.

Step 8

Slowly stir in the cornstarch mixture and cook for another 1-2 minutes, or until the sauce has thickened to your desired consistency.

Step 9

Return the cooked chicken to the skillet and toss to coat in the sauce. Cook for 2 more minutes to heat through.

Step 10

Remove the skillet from heat and sprinkle with sliced scallions for garnish.

Step 11

Serve the Polynesian Chicken over cooked rice (optional) and enjoy!
