  • 2 cups red wine (dry, such as Merlot or Cabernet Sauvignon)
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 4 fresh thyme sprigs
  • 1 bay leaf
  • 8 ounces mushrooms, sliced
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Pat the chicken thighs dry with paper towels and season them with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.
