Ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 3 medium roma tomatoes, diced
  • 4 cups calabaza squash, peeled and cubed
  • 1.5 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the chicken thighs on both sides with half of the salt and black pepper.

Step 3

Sear the chicken thighs in the pot for 4-5 minutes per side, or until golden brown. Remove the chicken and set aside.

Step 4

In the same pot, add the diced onions and sauté for 3-4 minutes until translucent.

Step 5

Stir in the minced garlic and cook for 30 seconds until fragrant.

Step 6

Add the diced tomatoes, cumin, oregano, smoked paprika, and the remaining salt and pepper. Stir well to incorporate the spices.

Step 7

Return the chicken to the pot, nestling it into the tomato mixture.

Step 8

Add the cubed calabaza squash and pour in the chicken broth. Bring the mixture to a simmer.

Step 9

Reduce the heat to low, cover the pot, and cook for 30-35 minutes, or until the chicken is fully cooked and tender.

Step 10

Taste and adjust seasoning if needed.

Step 11

Garnish with chopped cilantro, if desired, and serve warm with rice, tortillas, or bread.
