  • 4 pieces Boneless, skinless chicken breasts

  • 2 tablespoons All-purpose flour
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 4 cloves Garlic cloves, minced
  • 1 cup Sun-dried tomatoes (packed in oil), chopped
  • 1 cup Chicken broth
  • 1.5 cups Heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 3 cups Fresh spinach
  • 2 tablespoons Fresh basil, chopped (optional)

Directions

Step 1

Season the chicken breasts on both sides with salt, pepper, and Italian seasoning. Lightly coat each piece with all-purpose flour, shaking off any excess.

Step 2

Heat a large skillet over medium-high heat and add the olive oil and butter. Once the butter is melted and bubbling, add the chicken breasts. Cook for 4-5 minutes per side until golden brown. Remove the chicken and set aside (it will finish cooking in the sauce).
