Ingredients

  • 4 pieces Chicken breasts (boneless, skinless)
  • 2 whole Lemons (juice and zest)
  • 3 tablespoons Olive oil
  • 3 cloves Garlic cloves (minced)
  • 1 cup Chicken stock
  • 0.25 cup All-purpose flour
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Capers (optional)

Directions

Step 1

Pound the chicken breasts to an even thickness, about 1/2 inch, between two sheets of plastic wrap or parchment paper.

Step 2

In a shallow dish, mix the flour, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper. Dredge each chicken breast in the seasoned flour, shaking off any excess. Set aside.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for 4-5 minutes on each side or until golden brown and cooked through. Transfer to a plate and cover with foil to keep warm.
