  • 4 pieces chicken thighs (bone-in, skin-on)

  • 4 sprigs fresh thyme
  • 6 leaves fresh sage
  • 150 milliliters dry white wine
  • 100 milliliters chicken broth
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Rinse the chicken thighs under cold water, pat them dry with paper towels, and season both sides evenly with salt and black pepper.

Step 2

Heat a large skillet or sauté pan over medium heat. Add the olive oil and butter, allowing the butter to melt and combine with the oil.

Step 3

Add the chicken thighs to the pan, skin-side down. Cook for 6-8 minutes without moving them, or until the skin is golden and crispy. Flip the thighs and cook the other side for about 5 minutes. Remove the chicken from the pan and set aside.
