Ingredients

  • 1.5 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 2 tablespoons Granulated sugar
  • 0.25 teaspoons Salt
  • 1.25 cups Milk
  • 1 large Egg
  • 3 tablespoons Unsalted butter (melted)
  • 1 teaspoon Vanilla extract
  • 4 small drops of each color Food coloring (assorted colors)
  • 1 as needed Non-stick cooking spray or butter

Directions

Step 1

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.

Step 2

In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

Step 3

Gradually add the wet ingredients to the dry ingredients. Stir gently until just combined—do not overmix, as this will make the pancakes tough.

Step 4

Separate approximately 1/4 cup of the batter into small bowls (the number of bowls depends on how many colors you plan to use). Add 1-2 drops of food coloring to each bowl and stir until the colors are evenly distributed.

Step 5

Transfer each colored batter into a small piping bag or a resealable plastic bag with a tiny corner snipped off.

Step 6

Heat a non-stick skillet or griddle over medium heat and lightly grease it with non-stick cooking spray or butter.

Step 7

For each pancake, pour about 1/4 cup of the plain pancake batter onto the skillet. Immediately use the colored batter to pipe small dots onto the surface of the pancake. Be creative and place the dots randomly or in patterns!

Step 8

Cook the pancake until bubbles form on the surface and the edges look set (about 2-3 minutes). Flip the pancake carefully with a spatula and cook for an additional 1-2 minutes, or until golden brown on both sides.

Step 9

Transfer the cooked pancake to a warm plate and cover with a clean kitchen towel to keep warm. Repeat with the remaining batter, greasing the skillet again as needed.

Step 10

Serve the Polka Dot Pancakes warm with your favorite toppings, such as syrup, whipped cream, or fresh fruit, and watch the smiles appear!
