Ingredients

  • 4 links Polish sausage
  • 4 cups Cabbage
  • 2 medium Carrots
  • 1 small Red onion
  • 0.3333 cup Mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Apple cider vinegar
  • 2 teaspoons Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Vegetable oil

Directions

Step 1

Slice the Polish sausage links into 1-inch pieces and set aside.

Step 2

Shred the cabbage and carrots, and thinly slice the red onion. Combine them in a large mixing bowl.

Step 3

In a small bowl, prepare the coleslaw dressing by whisking together mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper. Adjust seasoning to taste, if required.

Step 4

Heat a large skillet over medium heat and add the vegetable oil. Once hot, add the sliced sausage and cook for 8-10 minutes, stirring occasionally, until browned and heated through. Remove the sausage and set aside.

Step 5

In the same skillet, add the shredded cabbage, carrots, and red onion. Cook for 5-7 minutes, stirring frequently, until the vegetables are slightly softened but retain a bit of crunch.

Step 6

Lower the heat and pour the dressing over the cooked vegetables in the skillet. Stir well to ensure the vegetables are evenly coated and the dressing is heated through.

Step 7

To serve, divide the hot coleslaw onto plates or bowls, and top with the cooked Polish sausage pieces.

Step 8

Enjoy this comforting Polish-inspired dish with a side of crusty bread or boiled potatoes, if desired.
