Ingredients

  • 2 links Polish sausage
  • 2 pieces Submarine rolls
  • 1 medium Yellow onion
  • 1 medium Green bell pepper
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 cup Mozzarella cheese
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Butter
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat a skillet over medium heat and add 1 tablespoon of olive oil.

Step 2

Slice the Polish sausage links in half lengthwise. Place them in the skillet and cook for 4–5 minutes on each side until browned and heated through. Remove from the skillet and set aside.

Step 3

Thinly slice the onion and green bell pepper. Mince the garlic cloves.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the onion and bell pepper for 5–6 minutes until softened and slightly caramelized. Add the minced garlic and cook for 1 more minute. Season with salt and black pepper.
