Ingredients

  • 1 pound Polish kielbasa sausage
  • 4 medium Potatoes
  • 3 medium Carrots
  • 1 large White onion
  • 1 small head Cabbage
  • 3 pieces Garlic cloves
  • 2 tablespoons Olive oil
  • 4 cups Chicken or vegetable broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Caraway seeds
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 piece Bay leaf
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Slice the Polish kielbasa sausage into 1/2-inch thick rounds and set aside.

Step 2

Peel and cut the potatoes into 1-inch cubes. Peel and slice the carrots into rounds. Finely chop the onion, shred the cabbage, and mince the garlic cloves.

Step 3

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sliced sausage and cook until lightly browned on both sides, about 5 minutes. Remove the sausage and set aside.

In the same pot, add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional minute, stirring frequently.
