Ingredients

  • 1 lb Polish sausage (kielbasa)
  • 4 medium Russet potatoes
  • 1 large White onion
  • 3 pieces Garlic cloves
  • 2 tbsp Fresh parsley
  • 1 tsp Dried thyme
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Butter
  • 2 tbsp Olive oil
  • 0.5 cup Water or chicken broth

Directions

Step 1

Peel and dice the potatoes into 1-inch cubes and set them aside in a bowl of cold water to prevent browning.

Step 2

Slice the Polish sausage into 1/2-inch-thick rounds. Peel and finely chop the onion and garlic.

Step 3

Heat a large skillet over medium heat. Add the olive oil and butter, allowing it to melt and coat the pan evenly.

Step 4

Add the sliced Polish sausage to the skillet and cook for 5-7 minutes, stirring occasionally, until lightly browned. Remove the sausage from the pan and set it aside on a plate.

Step 5

Drain the potatoes and add them to the same skillet. Cook for about 10 minutes, stirring occasionally, until the edges of the potatoes are golden and slightly crispy.

Step 6

Add the chopped onion and garlic to the skillet with the potatoes, cooking for another 5-6 minutes until the onion is soft and translucent.

Step 7

Sprinkle the dried thyme, salt, and black pepper over the potato mixture. Stir well to coat everything evenly.

Step 8

Return the cooked sausage to the skillet. Pour in the water or chicken broth, reduce the heat to low, and cover the skillet with a lid. Let the mixture simmer for 10-15 minutes, or until the potatoes are tender.

Step 9

Remove the skillet from the heat and stir in the chopped parsley for a fresh herbal note.

Step 10

Serve hot as a standalone dish or alongside crusty bread and pickles for a complete Polish-inspired meal.
