Ingredients

  • 500 g Polish kielbasa (smoked sausage)
  • 2 tbsp Olive oil
  • 1 medium Yellow onion
  • 2 Garlic cloves
  • 2 tbsp Tomato paste
  • 400 g Crushed tomatoes
  • 250 ml Vegetable broth (or water)
  • 1 tsp Sugar
  • 1 tsp Paprika
  • 0.5 tsp Ground black pepper
  • 0.5 tsp Salt
  • 1 tsp Dried oregano
  • 2 tbsp Fresh parsley (for garnish)

Directions

Step 1

Slice the Polish kielbasa into 1/2-inch thick rounds and set aside.

Step 2

Peel and finely chop the onion and garlic cloves.

Step 3

Heat the olive oil in a large skillet or pan over medium heat.

Step 4

Add the sliced kielbasa to the skillet and cook for 5–7 minutes, turning occasionally, until browned. Remove the kielbasa and set aside.

Step 5

In the same skillet, add the chopped onion and sauté for 3–4 minutes, until translucent.

Step 6

Add the minced garlic and cook for an additional minute until fragrant.

Step 7

Stir in the tomato paste and paprika, and cook for 1–2 minutes to allow the tomato paste to caramelize slightly.

Step 8

Add the crushed tomatoes, vegetable broth, sugar, ground black pepper, salt, and dried oregano. Stir well to combine.

Step 9

Bring the sauce to a gentle simmer and let it cook for 10 minutes, stirring occasionally.

Step 10

Return the browned kielbasa to the skillet and mix it into the sauce. Simmer for an additional 5–7 minutes so the sausage absorbs the flavors of the sauce.

Step 11

Taste and adjust seasoning if necessary.

Step 12

Garnish with freshly chopped parsley before serving.

Step 13

Serve hot with rice, mashed potatoes, or crusty bread.
