Ingredients

  • 1 pound Polish sausage
  • 4 medium Potatoes
  • 1 large White onion
  • 3 medium Carrots
  • 1 large Bell pepper (any color)
  • 3 Garlic cloves
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1.5 cups Cheddar cheese, shredded
  • 0.75 cup Heavy cream

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and dice the potatoes into 1-inch cubes. Peel the carrots and slice them into thin rounds. Chop the bell pepper and white onion into bite-sized pieces. Mince the garlic cloves.

Step 3

Slice the Polish sausage into 1/2-inch thick rounds.

Step 4

In a large skillet, heat the olive oil over medium heat. Add the Polish sausage and cook until browned on both sides, about 5 minutes. Remove the sausage and set it aside.

In the same skillet, add the onions and garlic. Sauté for 3 minutes until fragrant, then add the carrots and bell pepper. Cook for an additional 5 minutes until slightly softened.
