Ingredients

  • 12 ounces Polish sausage (kielbasa)
  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 2 medium Bell peppers (red, yellow, or green), diced
  • 2 cloves Garlic, minced
  • 1 cup Long-grain white rice, uncooked
  • 2 cups Chicken broth
  • 1 15-ounce can Diced tomatoes (canned, with juices)
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Slice the Polish sausage into 1/4-inch thick rounds and set aside.

Step 2

In a large skillet or deep sauté pan, heat the olive oil over medium heat.

Step 3

Add the sliced sausage to the pan and sauté for 5-7 minutes, stirring occasionally, until lightly browned. Remove the sausage from the pan and set aside.

Step 4

In the same pan, add the diced onion and bell peppers. Sauté for 4-5 minutes until softened.

Step 5

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 6

Add the uncooked rice to the skillet and stir to coat it in the oil and vegetables, allowing it to toast for 1-2 minutes.

Pour in the chicken broth and diced tomatoes (with their juices). Stir to combine.

Season the mixture with smoked paprika, dried thyme, salt, and black pepper.

Return the browned sausage to the pan and stir to combine. Cook for an additional 5 minutes to reheat the sausage.

Remove the skillet from the heat and sprinkle the dish with fresh parsley.
