Ingredients

  • 1 lb Polish sausage (kielbasa)
  • 1 medium head Green cabbage
  • 1 large Yellow onion
  • 2 medium Carrots
  • 3 large Garlic cloves
  • 3 tbsp Butter
  • 1 tbsp Olive oil
  • 1 cup Chicken broth
  • 1 tsp Smoked paprika
  • 1 tsp Caraway seeds (optional)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Slice the Polish sausage into 1/2-inch rounds and set aside.

Step 2

Core and chop the cabbage into bite-sized pieces. Peel and thinly slice the onion. Peel and slice the carrots into thin rounds. Mince the garlic cloves.

Step 3

Heat a large skillet or Dutch oven over medium-high heat. Add the olive oil, and once hot, add the sliced sausage. Cook for 3-4 minutes per side, until browned. Remove the sausage and set aside.

Step 4

In the same skillet, add the butter and let it melt. Add the onions and carrots, stirring occasionally, and cook for 5 minutes until they start to soften.

Add the minced garlic, smoked paprika, and caraway seeds (if using). Stir and cook for another 1-2 minutes until the garlic is fragrant.

Add the chopped cabbage to the skillet, and stir to mix with the other vegetables. Season with salt and black pepper.

Pour in the chicken broth. Cover the skillet with a lid, reduce heat to medium, and let the cabbage steam for 10 minutes, stirring occasionally, until tender.

Return the browned sausage to the skillet and mix it with the cabbage and vegetables. Cook uncovered for 5 more minutes, allowing the flavors to combine.
