Peel the potatoes and chop them into bite-sized cubes, approximately 1 to 1.5 inches in size.
Place the chopped potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water.
Bring the pot to a boil over medium-high heat, then reduce the heat and simmer until the potatoes are fork-tender, about 10-12 minutes. Be careful not to overcook them—they should hold their shape.
While the potatoes are cooking, peel and finely chop the onion.
