Ingredients

  • 3 medium Russet potatoes
  • 1 large Yellow onion
  • 6 large Eggs
  • 0.5 cups Milk
  • 1 cup (shredded) Cheddar cheese
  • 2 tablespoons (chopped) Fresh dill
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and slice the potatoes into thin, even rounds. Set them aside in a bowl of water to prevent browning.

Step 3

Peel and finely slice the onion.

Step 4

In a large oven-safe skillet, heat the olive oil and butter over medium heat.

Step 5

Drain the potatoes and pat them dry with a clean towel. Add the potatoes and onions to the skillet, then season with half the salt and pepper. Cook for about 10 minutes, stirring occasionally, until the potatoes are tender and slightly golden.

Step 6

While the potatoes are cooking, crack the eggs into a mixing bowl. Add the milk, remaining salt, and pepper, and whisk until smooth.

Step 7

Once the potatoes and onions are cooked, spread them evenly across the skillet. Sprinkle the shredded cheddar cheese and fresh dill over the top.

Step 8

Pour the egg mixture into the skillet, ensuring it evenly coats the potatoes and onions.

Step 9

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the omelet is set and the top is golden.

Step 10

Remove from the oven and let the omelet rest for 5 minutes before slicing into portions.

Step 11

Serve warm, garnished with additional fresh dill if desired.
