Preheat your oven to 375°F (190°C).
Season the pork tenderloin with salt, black pepper, and smoked paprika on all sides.
In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side. Remove the pork from the skillet and set aside.
Reduce the heat to medium and add the butter to the skillet. Once melted, add the sliced onion and cook until soft and slightly caramelized, about 5 minutes.
Add the minced garlic and cook for another 1 minute until fragrant.

While the pork is roasting, heat the sauerkraut in a small saucepan over low heat until warmed through.
Once the pork is done, remove it from the skillet and let it rest for 5-10 minutes before slicing.
