Peel and cube the potatoes. Place them in a pot of salted water and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.
Drain the potatoes and allow them to cool slightly. Then mash them until smooth using a potato masher or ricer. Avoid over-mashing to prevent a gummy texture.
Measure 500 grams of mashed potatoes into a large mixing bowl. Add the flour, egg, and salt. Mix gently until a dough forms. Be careful not to overwork the dough to keep the kopytka light and fluffy.
Lightly flour a clean work surface. Divide the dough into four equal portions and roll each portion into a long log, about 1/2 inch (1.3 cm) in diameter.
Using a sharp knife, cut the logs at an angle into 1-inch (2.5 cm) pieces. These small, diamond-shaped dumplings are the kopytka.
Bring a large pot of salted water to a boil. Reduce to a simmer and carefully drop the dumplings in batches into the water. Cook until they float to the surface, about 3-4 minutes. Remove them with a slotted spoon and transfer to a plate.
