  • 1 lb kielbasa sausage
  • 1 large yellow onion
  • 3 garlic cloves
  • 2 large carrots
  • 3 medium russet potatoes
  • 1 medium red bell pepper
  • 4 cups vegetable or chicken broth
  • 14.5 oz canned diced tomatoes
  • 2 tbsp tomato paste
  • 2 tsp paprika
  • 1 tsp smoked paprika
  • 1 tsp dried marjoram
  • 0.5 tsp black pepper
  • 2 bay leaves
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 tbsp fresh parsley

Directions

Step 1

Slice the kielbasa into 1/4-inch-thick rounds. Dice the onion, mince the garlic, cut the carrots into thin slices, peel and cube the potatoes, and dice the red bell pepper.

Step 2

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the kielbasa slices and cook until lightly browned on both sides, about 5-6 minutes. Remove the kielbasa and set it aside.

In the same pot, add the diced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for another 1 minute until fragrant.
