Ingredients

  • 2 pounds Yukon Gold potatoes
  • 4 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 2 cups Whole milk
  • 0.5 cups Heavy cream
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 2 tablespoons Chopped fresh dill (optional)

Directions

Step 1

Peel and cube the potatoes into evenly-sized pieces, about 1 inch in diameter, to ensure even cooking.

Step 2

Place the cubed potatoes in a large pot and fill with enough cold water to cover them by about an inch. Add 1 teaspoon of salt to the water.

Step 3

Bring the pot of potatoes to a boil over medium-high heat. Reduce heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 4

While the potatoes cook, prepare the creamy sauce. In a medium saucepan, melt the butter over medium heat.

Step 5

Once the butter is melted, whisk in the flour to form a roux. Cook the roux for 1-2 minutes, stirring constantly, until it turns a light golden color.

Step 6

Gradually pour in the milk, whisking constantly to prevent lumps. Continue to cook and whisk for 3-4 minutes, or until the sauce begins to thicken.

Step 7

Reduce the heat to low and stir in the heavy cream, remaining 0.5 teaspoons of salt, and ground black pepper. Cook for an additional 2 minutes, then remove from heat.

Step 8

Drain the cooked potatoes and return them to the pot. Pour the creamy sauce over the potatoes and gently stir to coat them evenly.

Step 9

Transfer to a serving dish and garnish with fresh dill, if desired. Serve warm and enjoy!
